Above all, Konditorei for me is tradition. Therefore I focus on central European pastry that is influenced by Austria, Hungary, Germany and in my case mainly from Switzerland. This style appeals to a wider crowd due to the simplicity of the recipes and the availability of ingredients and equipment.
